Emotional = Smores Brownies

Maybe I am an emotional eater. Maybe I'm an emotional baker. Maybe I'm both.

I've been emotional this week for a couple of reasons. My precious friend Katy got married this weekend to the most adorable fella. They've been dating for 10 years and FINALLY tied the knot!! It was such a sweet wedding and I am thankful to have been a part of it. Katy has been the most constant and consistent friend to me, even when we go months without talking. I love her dearly which is one reason for the emotional rollercoaster I've been on. Here are a few pics from that precious weekend.














My girls are the other reason I can't seem to hold it together. I've had 8 wonderful weeks with them! That all comes to a close tomorrow. I know, suck it up, Alison. The majority of women out there work and never get even 8 weeks. But I do and I'm spoiled, and I am going to miss my girls something fierce. We have had the most wonderful summer. They are both at the most adorable stages and I'm afraid I'm going to miss something. For example:



Lily Rain is yelling at our dog, Carolina Belle, who was hiding under the bed. She had chewed up Lily Rain's favorite bowl and play stethoscope.  I know, totally random combo. Anyway, LR was yelling "Carolina, tell Lily Rain sorry! You in trouble! You know better!" It was so hilarious because LR was so serious. It's those little everyday moments that I'm going to miss.

I don't know if it was my emotions or just my addiction to sweets, but I just HAD to bake today. I knew it needed to be something rich and incredibly indulgent, so here we have...

Smores Brownies
1 box of your favorite brownie mix and all the ingredients to make them
1 1/4 cup graham cracker crumbs
1/3 cup melted butter
3 tablespoons sugar
Semi-sweet chocolate chunks
mini marshmallows

Preheat oven to 350 degrees. Mix the butter, graham cracker crumbs, and sugar together. Press onto the bottom of a foil-lined baking dish. I used a 9x9 pan. Bake for 8-10 minutes.


Mix your brownie batter and pour onto of baked crust. Bake for 30-35 minutes. The brownies don't have to be completely done yet, but almost.


Put your chocolate chunks and marshmallows on top and bake until the marshmallows are lightly browned. Yum!


So, although I am crazy about dessert, this was INCREDIBLY rich. One small brownie will do the trick.
